A twist on a classic, this tuna Caesar salad is the perfect lunch (or dinner!) for two! PS. Don’t skip out on the yummy croutons!
Confession: I have only started eating canned tuna recently. Why? I’m not quite sure, but I know that I had an aversion to fish growing up (that I am growing out of) and it is likely the reason why I did not venture into the tinned tuna world. BOY do I wish I have entered it sooner.
In the past month or so, I’ve been reaching for canned tuna for lunches at least once a week. It’s great tossed with grilled vegetables and beans and I even love some of the flavored versions on crackers. Honestly, I am a total convert – and it’s how this tuna caesar salad for two came to be!
Why I love Tuna Caesar Salad
Honestly, it’s because this salad is delicious whether you go the quick, toss store-bought ingredients together, or the gourmet, make your own caesar salad dressing and croutons. If you’re going the store bought way, may I suggest Renée’s fat-free casear salad dressing – it’s a great dressing when you’re in a pinch.

Going store-bought or gourmet works. Whether you’re buying dressing and croutons or making your own, no one will judge you!
Watch out for saltiness. Caesar dressing, croutons and parmesan are all made better by salt, but in combination together can result in a salty tuna caesar salad. To mitigate over salty salad try adding parmesan gradually, making less salty croutons, or adjusting the salt in the dressing. Note that my lighter caesar salad dressing already has parmesan in it, and therefore just a couple savings on top of the salad is enough!
Don’t add the dressing until serving. Adding the dressing too soon can cause wilty lettuce which will defeat the purpose of a refreshing caesar! If you’re taking this salad to go, put the dressing in a separate container and toss just before you’re about to eat.

TUNA CAESAR SALAD FOR TWO

INGREDIENTS
- 5 cups romaine lettuce, chopped
- 1 cup homemade croutons (or store-bought)
- 2 100g cans tuna, drained
- 1/4 cup lighter casear salad dressing (or store bought)
- 1/4 cup shaved parmesan
INSTRUCTIONS

Toss all ingredients in a large bowl and serve.
