This Caprese Arugula Flatbread Pizza recipe is a date night in and a weeknight dinner miracle worker! It’s Netflix binge-worthy, romantic, quick to make, great with a glass of wine, and has a good dose of greens!!!
It’s date night in after a long week. All you feel like doing is binge-watching Netflix with tones of not-so-healthy food but that little angel on your shoulder is reminding you that greasy pizza, potato chips and coke are not the way to go (and not so romantic); yet that devil on the other side absolutely does not want to spend the night in the kitchen on a Friday night.
What is a man/woman/girl/boy to do?!
Answer: Caprese Arugula Flatbread Pizza!
Perfect for a date night in AND perfect for a weeknight meal too!
First up? Making the pizza portion. Now you can get fancy with making pizza dough or using a premade dough, but this will take longer than our desired 20 minutes. I love using flatbreads! My grocery store has their own pizza flatbreads that are inexpensive and perfect for two people (they come two in a package). But any type of flatbread would do – HELLO NAAN!
Next of course is the sauce!
So, if you’re in a pinch and your favorite isn’t available – I cook in many different kitchens and shop in different stores, I’m often in a pinch! I like taking a 400mL can of whole San Marzano tomatoes and processing them in a food processor until smooth with about one teaspoon of oregano, a quarter teaspoon of chili flakes, half a teaspoon of basil and a little salt and pepper to taste. Literally, this adds no time at all, 3 minutes max!
Anyways! Take that can of sauce or the one you whipped up and layer it on the flatbreads with slices of mozzarella cheese and off into the oven for 10 minutes to get nice, golden and bubbly!
Added bonus before throwing them in?!
Throw 3-5 slices on top or under if you or your significant other likes their pizza meaty and maybe you will earn some brownie points!
As the pizza’s get all yummy and melty-cheesy in the oven, making the caprese arugula topper is a piece of cake!
Prewashed lettuce is a time saver. Cocktail bocconcini and cherry tomatoes can be halved and tossed right into the bowl with the arugula. Drizzle with olive oil, add some salt and pepper, and you are almost ready!
But before you can pass go and collect two hundred dollars you need to let the pizza cool so that the cheese doesn’t slide right off.
Another tip-top-tip: cut the pizza into more manageable slices before topping it with the caprese arugula! It’ll be easier to manage if you don’t have to try and cut the pizza into plate-sized portions through the salad.
I always enjoy this pizza in front of the tv with a glass of wine! It’s definitely my idea of date night in, and hopefully, it will be yours too!

- 2 flatbreads
- 1 can of pizza sauce
- 6 to 8 slices of mozzarella cheese
- 2 cups arugula
- ~ 10 cherry tomatoes cut in half
- ~ 10 cocktail bocconcini cut in half
- 2 tbsp. olive oil
- Salt and pepper to taste
Preheat the oven to 425F and line a baking sheet with a reusable liner or parchment paper for easy clean up.
Lay the flatbreads on the sheet and spread a good amount of pizza sauce, about 4 to 6 tablespoons, leaving room for a crust.
Lay the slices of mozzarella over top and bake for 10 minutes or until the bread is warmed through and the cheese is melted and golden.
As the pizza bakes, prepare the caprese and arugula by mixing the rest of the ingredients in a large bowl.
Once the pizza is ready, remove from the oven and let sit for at least 5 minutes to ensure that the cheese sticks.
Cut the pizza into more manageable pieces and lay the caprese arugula on top. Drizzle with a little more olive oil if so desired and serve!
