It’s not grilling season yet in Montreal, but the weather is sure warming up and the snow is melting quickly. The other day the sun was out, it wasn’t too cold and you could almost smell spring in the air. So I whipped out my enameled cast iron grill pan and decided I was gonna ‘fake’ grill marks on something. That something turned out to be cauliflower.

It was superduper and ready very quickly with a little trick.

Outside on the BBQ, you would be able to close the lid and get the concentrated heat to cook the cauliflower all the way through with beautiful grill marks and flavor from the marinade and grill itself. Inside we don’t have two things: the cover of the grill to cook it through or the flavor that a grill can give food.

The trick to cooking the cauliflower steaks all the way through? A quick little trip in the microwave.

Yes, the microwave can be a useful tool in the kitchen while cooking – it’s not just to reheat meals! I use it to steam veggies (it’s a perfect little trick when you want to focus on another aspect of the meal like a great 30 Minute Chicken Piccata) or want to get some veggies cooked fast (like in Chinese Broccoli Beef).

As for the flavor that the grill gives food? Hard to replicate. So I opted for powerful flavors in the, what I consider, Greek marinade: olive oil, lemon, fresh oregano and, of course, lots of garlic.

When I made these Grilled Greek Cauliflower Steaks for my boyfriend I served them with homemade tzatziki (I’m still working out kinks in the recipe) and some sausages because I thought the cauliflower itself would not be enough for us. That being said, I’ve proven that they are a great side dish, but I also believe with tzatziki and roasted nuts (I’m thinking walnuts or pine nuts here) these cauliflower steaks would make a great light lunch or supper.

Hope you enjoy!
