Easy and healthier/lighter caesar salad dressing is everything you want in a caesar dressing: tangy, salty, umami, peppery, lemony, creamy… whip some up for the week and use it on everything!
I believe caesar salads, especially caesar salad dressings, are THE gateway salad to a lifelong love of salads.
Whats not to like?! It has great umami flavor thanks to anchovies, worcestershire sauce and parmesan cheese. Hints of tanginess from lemon. And of course, creaminess from, depending on how you make a traditional caesar salad dressing, eggs and oil or mayonnaise.
There is a problem with an authentic caesar salad for me though… Whenever I order a caesar salad as my appetizer I feel pretty full afterward. Not bloated or anything, but when my main course comes I’m surely not going to finish it all.
So at home, I’ve come up with a solution: lighter caesar salad dressing. It’s all the goodness of a homemade traditional caesar dressing, without the heaviness!
My solution was using plain greek yogurt instead of mayonnaise. I did try regular yogurt but it was not as thick as I would have liked it but still tasted great.
And 3 anchovy fillets did the trick for great umami flavor, but if you ask my boyfriend I could have put a lot more (he was eating them right out of the container and loves them!).
Before you ask, anchovies are essential to a caesar dressing! Whether its the traditional or a lightened up version, they add umami flavor and saltiness that it just unparalleled by any substitute – I also promise there is no fishy flavor. But if you are reluctant, add salt to taste!

- 1/2 cup plain Greek yogurt
- 1/4 cup parmesan cheese grated
- 3 - 6 anchovy fillets
- 2 garlic cloves roughly cut
- 2 tbsp. olive oil
- 2 tbsp. lemon juice
- 1 tsp. worcestershire sauce
- Freshly ground pepper
Mix all ingredients in a food processor and blend until smooth.
