Simple Lemony Quinoa Salad

INGREDIENTS

  • 1 cup quinoa
  • 1 to mato seeded and diced
  • 1 cup cucumber diced
  • 1/2 small onion sliced
  • 3 tbsp. olive oil
  • juice of 1/2 lemon

INSTRUCTIONS

  1. Cook quinoa according to package instructions and allow to cool.
  2. Toss quinoa, tomato, cucumber, onion, oil and lemon together.
  3. Season with salt and pepper to taste. Serve.
