INGREDIENTS

Coleslaw:

  • 4 cups cabbage chopped
  • 2 cups carrots grated
  • 1 red bell pepper sliced
  • 1 1/2 cups edamame cooked and shelled
  • 3 scallions sliced
  • 1/3 cup peanuts roughly chopped
  • 1 bunch cilantro chopped

Ginger-Peanut Punch Dressing:

  • 1/4 cup honey
  • 1/4 cup vegetable or canola oil use an oil that is tasteless
  • 1/4 cup rice vinegar
  • 1 tbsp. soy sauce gluten-free if needed
  • 1 tbsp. sesame oil
  • 2 tbsp. peanut butter
  • 2 tbsp. ginger minced
  • 1 garlic clove minced
  • 1/2 tsp salt optional, taste the dressing first and add more if needed

INSTRUCTIONS

  1. Mix all the coleslaw ingredients in a large bowl.
  2. In a jar, place all the ingredients for the dressing and shake until the peanut butter is well combined.
  3. Pour the dressing over the coleslaw and toss to coat everything evenly. Let sit for about 10 minutes to let the flavours of the dressing soak up. Serve cold.
