Healthy Tomato Scallion White Bean Dip

Hearty white cannellini beans mashed to a rustic hummus-like dip are topped with fresh tomatoes and scallions to make this Healthy Tomato Scallion White Bean Dip. A perfect appetizer, snack, or lunch!

INGREDIENTS

  • 1 19oz can white beans
  • 3 tbsp. olive oil
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • 2 to matoes chopped
  • 3 scallions whites removed and chopped

INSTRUCTIONS

  1. In a bowl, mash beans with garlic, 2 tbsp. oil, salt and pepper until mostly mashed with some whole beans intact, think rustic.
  2. Next, in a new bowl, mix together the remaining oil, tomatoes, scallions and salt and pepper to taste.
  3. Before serving, place the bean mixture in a bowl with a well in the center, place the tomato mix pilled high in that well.
  4. Serve with sturdy chips.

RECIPE NOTES

If making the dip ahead, store the bean mix and the tomato mix separately and only combine before serving.
