Warm Garlicky Kale & Quinoa Salad

  • 1/2 cup quinoa
  • 4 tbsp. olive oil
  • 1 small onion chopped
  • 5 garlic cloves minced
  • 1 head of kale torn into small pieces
  • Salt and pepper


  1. Cook quinoa according to package instructions. Usually: bring one cup of water to a boil, add quinoa and a pinch of salt, reduce heat and simmer covered for 15 minutes until all the liquid has been absorbed and the quinoa is no longer crunchy.
  2. As the quinoa cooks, heat oil in a large pan over medium-high heat. Add onions and sauté until translucent, about 5 minutes.
  3. Add minced garlic and stir until fragrant, about 1 minute.
  4. Next, reduce heat to medium and add kale and sauté until nicely wilted, about 10-15 minutes.
  5. Next add quinoa, and stir until well combined. Season with salt and pepper to taste, serve.
