Caprese Arugula Flatbread Pizza

This Caprese Arugula Flatbread Pizza recipe is a date night in and a weeknight dinner miracle worker! It’s Netflix binge-worthy, romantic, quick to make, great with a glass of wine, and has a good dose of greens!!!

  • 2 flatbreads
  • 1 can of pizza sauce
  • 6 to 8 slices of mozzarella cheese
  • 2 cups arugula
  • ~ 10 cherry tomatoes cut in half
  • ~ 10 cocktail bocconcini cut in half
  • 2 tbsp. olive oil
  • Salt and pepper to taste


  1. Preheat the oven to 425F and line a baking sheet with a reusable liner or parchment paper for easy clean up.
  2. Lay the flatbreads on the sheet and spread a good amount of pizza sauce, about 4 to 6 tablespoons, leaving room for a crust.
  3. Lay the slices of mozzarella over top and bake for 10 minutes or until the bread is warmed through and the cheese is melted and golden.
  4. As the pizza bakes, prepare the caprese and arugula by mixing the rest of the ingredients in a large bowl.
  5. Once the pizza is ready, remove from the oven and let sit for at least 5 minutes to ensure that the cheese sticks.
  6. Cut the pizza into more manageable pieces and lay the caprese arugula on top. Drizzle with a little more olive oil if so desired and serve!
