INGREDIENTS

  • 1 tbsp. olive oil
  • 1 small onion sliced
  • 1 tbsp. curry powder make sure it is gluten-free
  • 1/2 tsp. ground turmeric
  • 1 can coconut milk
  • 1 15 oz. can chickpeas drained and rinsed
  • 4 cups spinach
  • Salt to taste

INSTRUCTIONS

  1. In a large skillet, heat oil over medium heat and soften the onion, about 5 minutes.
  2. Add curry powder and turmeric and keep sautéing until fragrant, about 30 seconds.
  3. Then add coconut milk and chickpeas and let simmer for 10 minutes to warm everything through and to thicken the coconut milk slightly.
  4. Add spinach and stir until just wilted and serve.

RECIPE NOTES

I love this with some basmati rice!
