Small Batch Chimichurri

Good things come in small packages, and this Small Batch Chimichurri is no exception! The combination of parsley, cilantro, garlic, shallots and red wine vinegar are a perfect marinade for meat and fish, great as an accompaniment, awesome mixed into salad dressings… It’s good for everything!

  • 1/4 cup red wine vinegar
  • 1/2 tsp. salt
  • 2 garlic cloves minced
  • 1 small shallot diced finely
  • 1 jalapeno seeded and diced finely
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped parsley
  • 1/3 cup olive oil


  1. Combine red wine vinegar, salt, garlic and shallots together in a bowl and let it sit while you chop the rest - it helps the flavors blend.
  2. Add the jalapeno, cilantro and parsley and mix together.
  3. While mixing add the olive oil.


This sauce is great as a marinade, accompaniment with potatoes or vegetables, and a couple of tablespoons can be used as a salad dressing!

The sauce only gets more flavourful with time!!! So do make it ahead if you have time and do keep it if you have leftovers!
