Soul Warming Caldo Verde Soup

Hearty sausages, potatoes and collard greens are here to fill you up and warm your soul in this Portuguese Caldo Verde Soup! One pot, easy to make and great as leftovers for the week!

INGREDIENTS

  • 450 gr. sausage cut into 1/2-inch disks
  • 2 tbsp. olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • 4 cups chicken broth homemade or low-sodium store bought
  • 4 cups water
  • 2 lbs. potatoes cut into 1/2-inch cubes
  • 1 lb. collard greens stems removed and cut into 1-inch pieces

INSTRUCTIONS

  1. In a large dutch oven, heat olive oil over medium-high heat. Add the sausage and cook until well browned, about 8 minutes, and remove.
  2. Reduce heat to medium and add onion and garlic to the pot and cook until translucent, about 5 minutes.
  3. Add chicken broth, water and potatoes, bring to a boil over medium-high heat. Once boiling reduce heat to a simmer. Cook until the potatoes are slightly tender, about 5 to 8 minutes.
  4. Add the collard greens and cook for 10 minutes more. Then return the sausages to the pot and continue to cook for another 8 to 10 minutes. The potatoes and collard greens should be nice and tender.
  5. Serve drizzled with olive oil.

RECIPE NOTES

If you want the soup to get nice and thick, remove one cup of broth and one cup of potatoes before adding the collard greens; blend together to form a gravy-like sauce and mix into the soup before serving.

If you don't have collard greens (or don't have access to them) you can use kale instead!
