SMALL BATCH SOFT & CHEWY SNICKERDOODLES

INGREDIENTS

Cookie Dough

  • ½ cup unsalted butter, softened
  • cup sugar
  • cup light brown sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 ½ cup all-purpose flour
  • 1 tsp. cream of tartar
  • ¼ tsp. salt
  • ½ tsp. baking soda
  • ¾ tsp. cinnamon

Sugar Coating

  • ¼ cup sugar
  • 1 tsp. cinnamon

INSTRUCTIONS

  1. Heat oven to 375F and line a baking sheet with parchment paper or a reusable liner.

  2. Using an electric mixer, cream together the butter and sugars until light and fluffy. Beat in egg and vanilla.

  3. In a separate bowl, mix together the dry ingredients. Mix into the butter mixture until just incorporated.

  4. Mix together the sugar and cinnamon for the cookie coating.

  5. Using a medium cookie scoop, measure out dough and form balls. Roll cookies in sugar coating and place 2-inches apart on the cookie sheet.

  6. Bake until the cookies are set and the edges are golden, about 10 mins. Let cookies cool on the baking sheet. Store in an airtight container.
