Cloud Eggs

INGREDIENTS

  • 4 eggs
  • Pinch of salt
  • Pinch of pepper

INSTRUCTIONS

  1. Preheat oven to 450F and line a baking sheet with parchment paper.
  2. Separate whites and yolks, putting all the whites in a large bowl and the yolks in 4 separate bowls.
  3. Season the whites with salt and pepper.
  4. Whip the whites until stiff peaks form.
  5. Spoon whites into 4 mounds on the baking sheet, making a well in each for the yolk (do not add the yolk yet!).
  6. Bake for 3 minutes, then add 1 yolk to each well.
  7. Bake for another 2 minutes to set the yolks. Serve immediately.
