INGREDIENTS

  • 1 head of cauliflower cut into two steaks use the florets remaining for something else
  • 3 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 2-3 garlic cloves minced
  • 1 tbsp. fresh oregano chopped
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper

INSTRUCTIONS

  1. In a bowl mix together the olive oil, lemon juice, garlic, oregano, salt and pepper to make the marinade.
  2. In heat a grill pan over medium heat. While it's heating up, place cauliflower steaks on a plate, cover with a wet paper towel and microwave for 2 minutes on high.
  3. Brush one side of the cauliflower steaks with the marinade and place marinade side down on the pan.
  4. Cook until nice caramelized grill marks appear, about 2 to 3 minutes.
  5. Brush the other side with the marinade and flip the steaks, cooking for another 2 to 3 minutes.
  6. Serve right away! Great served with some tzatziki.
