It's not too often you see luscious and protein-packed used to describe a recipe, however, these protein-packed ricotta pancakes are just that! They're light and fluffy and the perfect addition to any breakfast.
Life is in limbo, and all we want is normalcy or at least we want to find a new normal. At our house, we bridged the two by continuing to have a big breakfast on Saturday or Sunday – just that now, it’s always at home.
Over the last month, our breakfasts have included: eggs, bacon, toast, sourdough, waffles, and these protein-packed ricotta pancakes (actually, they’re on heavy rotation). Why? You can call them healthy-ish. They have no refined sugars, using maple syrup for sweetness and boast about 19g of protein grams per serving! The higher protein content helps you feel fuller for longer, which is always a good thing (in my book at least).
Why I love Protein Packed Ricotta Pancakes
As said before: more protein means your fuller for longer! Whenever I go out for breakfast I always go for eggs and bacon/ham/sausage because I know the protein would keep me full. Whereas when I order waffles or pancakes, although I am stuffed right after, I usually don’t remain full for as long.
Apart from that, they taste like PANCAKES. You’re not missing any fluffiness and they have the same great taste as regular pancakes despite the addition of the ricotta. In my opinion it’s a win-win-win!
Recipe Notes
Make sure the egg whites are well beaten. The fluffiness of these pancakes comes from the beaten egg whites and a little bit from the baking powder. To make sure the eggs are beaten to stiff peaks, lift the whisks out of the eggs and flip upside down. The egg remaining on the whisks should make a peak of a mountain (like the Matterhorn lol) and not fall over.
Use a non-stick pan or a pancake pan (if you have). The one thing I miss from cooking in my parents’ kitchen is their pancake pan, it was non-stick and didn’t need any butter! So I ordered myself a little quarantine treat and bought Le Creuset’s toughened nonstick griddle last week. It was on sale for 99$ (WOW!) and I believe it is now discontinued because I cannot find it on their site or on amazon. If you are looking, a similar pan would be their toughened nonstick crepe pan.

PROTEIN-PACKED RICOTTA PANCAKES

INGREDIENTS
- ½ cup ricotta
- ½ cup milk
- 1 tbsp. maple syrup
- 1 large egg
- ½ cup all-purpose flour
- 1 ½ tsp. baking powder
- 2 large egg whites
- butter or oil for cooking
INSTRUCTIONS

Mix together ½ cup ricotta, ½ cup milk, 1 tbsp. maple syrup and one whole egg into a large bowl. Add ½ cup flour and 1 ½ tsp. baking soda and mix until a smooth batter forms. Set a side.

Beat egg whites in using a stand mixer or a handheld electic mixer until stiff peaks form. Gently fold the egg whites into the batter until there are no visible lumps.

Heat butter or oil in a non-stick skillet over medium heat. Working in batches, pour ⅓ cup of batter per pancake into the pan. Cook until bubbles appear on the surface, about 2 minutes. Flip the pancakes to further cook the other side until golden, about 1 minute. Repeat with the remaining batter to make 6 pancakes and serve with your favorite toppings.
