These funfetti mug cakes are super easy and only take 5 minutes to make! They are literally the perfect celebration dessert for two!

Do you ever just get a craving that cannot be satisfied until you eat what your craving? Well it happened to me the other night! I was craving donuts (vanilla with sprinkles to be exact) and, because of our world situation, could not go get some. It was quite a predicament until I realized that I could try my hand at making a mug cake.
Low and behold, after a 10-minute research stint, I concocted a recipe and made a funfetti mug cake for one. The first was too greasy, the second attempt did not have enough flavor, and the third? It’s below! And it’s written for two – because once your significant other realizes you can make mug cakes in 5 minutes you are sure as hell making two.




Why I Love Funfetti Mug Cakes
This recipe is for when you want dessert (or have a craving for something cakey) but don’t want a large portion of a cake hanging out in your fridge calling your name. In addition to that, desserts are more of a weekend recipe for us and I probably have two egg yolks hanging out in the fridge after having made protein-packed ricotta pancakes for breakfast.
Also! An added bonus is that all ingredients get mixed in the mug! No need for extra bowls!

Recipe Notes
Make sure your mugs are microwave safe. Most mugs are microwave safe but make sure it is by checking the bottom or looking online. I have a couple of mugs that cannot be used in the microwave because of their metallic detailing or their glaze. As pictured, you can also use mini cocottes or small 8 ounce ramekins instead.
Mix in sprinkles at the very end. If you mix in the sprinkles with all the other ingredients you will end up with a green-ish blue batter caused by the dyes on the sprinkles. Keep it pretty by adding them in right before microwaving.

FUNFETTI MUG CAKES FOR TWO
These funfetti mug cakes are super easy and only take 5 minutes to make! They are literally the perfect celebration dessert for two!
INGREDIENTS
Ingredients for One Mug (This is easier - just repeat every ingredient for each mug!)
- 1 tbsp salted butter
- ¼ cup all-purpose flour
- 1 large egg yolk
- 2 tsp. sugar
- 1 ½ tbsp. milk
- 1 tsp. vanilla
- ½ tsp. baking powder
- 1 tsp. sprinkles
- whipping cream, for serving (optional)
INSTRUCTIONS

Melt 1 tbsp. butter in each mug for 30 to 45 seconds in the microwave.

Add ¼ cup flour, 1 egg yolk, 2 tsp. sugar, 1 ½ tbsp. milk, 1 tsp. vanilla and ½ tsp. baking powder to each mug and stir until batter forms. Stir in 1 tsp. sprinkles in each.

Microwave both mugs on high for about 1 minute 30 seconds or until cake pulls aways from the sides of the mug and the top is dry. Let cool for 1 minute, top with whipping cream and serve.
