With just 5 ingredients, this classic carbonara with zucchini noodles is sure to please. Plus in whips up in under 15 minutes!

I had a really bad week last week, but on Wednesday I knew I was home alone and that I could cook some of the stress away. Not for long though, because I still had to study and decipher a research plan for my master’s project for the coming year and the end of my studies (SCARY!). So in 15 minutes, I made this yummy Classic Carbonara with Zucchini Noodles recipe – because every time I make this recipe with pasta or zucchini noodles I hear the Two Greedy Italians in my head, and can’t help but smile, even with all the stress and tears.

Antonio Carluccio and Gennaro Contaldo are the Two Greedy Italians and if you get a chance look them up and watch some of their videos you’ll see why they make me smile – Italian-British accents WHAT!!! They also bring charisma and wittiness to their TV show, in which they return to Italy to see the evolution of society and food after having been gone for 40 years.
To me the show was amazing, especially since I have been to Italy many times and am in awe of Italian cooking – which reminds me: I need to get my Nonna to pass down some recipes (or at least watch her cook so I can write down the recipes with the proper measurements!). Another fun fact, or maybe a better known fact, is that Jamie Oliver is a protogé of Gennaro’s and that Gennaro usually has a dish special on Tuesday’s at Jamie’s Italian restaurants.

Besides the fact that I need to go back to England to eat at Jamie’s Italian. I also need to talk about this 5 ingredient, done 15 minutes recipe. Honestly, it’s that quick – and not to toot my own horn, delicious! As you can guess, the inspiration for this recipe comes from Jamie Oliver’s Gennaro’s Classic Spaghetti Carbonara recipe.

Typically I make this with any type of pasta – ok maybe not any, for some reason I have a thing against spaghetti (I think it’s because you need to be more involved to eat it without spilling on yourself, which I do often). However, the recipe works really well with zucchini noodles making a great gluten-free option – a perfect first recipe post for May, celiac awareness month.

Classic Carbonara with Zucchini Noodles
INGREDIENTS
- 6 slices of bacon cut into small pieces
- 2 cloves of garlic whole smashed with a knife
- 3 large egg yolks
- 1/2 cup parmesan cheese grated
- 3 medium sized zucchini spiralized or cut into noodles with a manolin
- Salt and pepper
INSTRUCTIONS

In a large pan over medium-high heat, cook the bacon with the garlic cloves.

Meanwhile, mix the egg yolks and parmesan together in a bowl.

Once the bacon is cooked, add the zucchini noodles and sauté until softened.

Add the cheese and egg mixture and toss. Serve with grated parmesan on top and salt and pepper to taste.
