Around this time of year I find there is always so much to do in so little time. On top of that it sucks when you get sick in the middle of it all… Yep, the week before Christmas with deadlines at work, the blog, Christmas baking, gift shopping and wrapping, I am sick – it sucks.
Pushing through it though! Thank god for Uber Eats/Skip the Dishes or having yummy meat sauce frozen in the freezer for a last minute dinner.
During the holidays it is always good to have simple and delicious recipes to fall back on. Which is the reason for sharing these bacon-wrapped asparagus today. Plus, who can resist bacon?!

Do cut the bacon strips in half. Cutting the bacon strips in half ensures that the bacon does not overlap along the asparagus spear and crisps up evenly.
Use a wire rack if you have. Cooking the bacon-wrapped asparagus on a wire rack helps with two things: even cooking, the hot air can pass more evenly all around the spear, and excess grease can drip off without the spear sitting in it.

BACON-WRAPPED ASPARAGUS
Served as an appetizer or side dish, this bacon-wrapped asparagus recipe is great for entertaining!
INGREDIENTS
- 24 asparagus spears, ends trimmed
- 12 strips of bacon
INSTRUCTIONS

Heat oven to 400F and place a wire rack on a rimmed baking sheet.

Cut bacon strips in half to yield 24 strips. Wrap each strip around an asparagus spear and place it on the prepared baking sheet. Do this for all asparagus spears.

Bake until bacon is crisp, about 18 to 22 minutes, turning halfway. Let cool and serve!
