It’s not often you get a recipe that is perfect for all three meals in a day: perfect for breakfast, perfect for lunch and perfect for dinner.
I typically have this 20 Minute Zucchini Onion Frittata for Two at dinner when my mom and I don’t feel like cooking and we also don’t feel like going out to get something – I’m not a big fan of delivery; to me you never know how long that pizza has been in the warmer bag and it always comes out greasier than when it went in.
So, we make this frittata, and the aroma of the softening zucchini and onions divine – not all comfort food needs to be heavy.
This zucchini onion frittata is just that for me: comfort food.
My mom has made this combination for me ever since I was a child, and I often make it for myself – either as a frittata or scrambled eggs.
Yes, if you don’t feel like trying to flip the frittata or putting it in the oven to set – SCRABBLE IT! WOOT! Easy solution, even if you were going for a frittata and the flip failed – yes, you were always going for scrabbled (wink-wink!) I won’t tell anybody.
Now we both (my mom and I) have been eyeing these amazing frittata pans from All-Clad. They interlock making the flip a breeze (as you can see we never put our frittatas in the oven)! But since storage is limited at my house and the number of pans we do have keeps adding up, the justification to get more is weak – but I still want them!
If you own those amazing pans (according to me) let me know what you think about them!
But if you don’t, to flip: place a wider plate over the pan and flip the set frittata onto the plate, then gently shimmy it back onto the pan to cook the other side. This is always a little difficult, a little scary and sometimes a little messy, but when you succeed you feel like nothing can defeat you, you feel golden.
So as I continually look for sales or decide to put those frittata pans on my Christmas wish list, I will continue to battle flipping my frittata. It’s a fun battle though, and one thing you should take on to taste the wonderful flavor combination of zucchini and onions.

- 2 tbsp. oil
- 1 medium zucchini, diced thinly
- 1 medium onion, diced
- 4 - 5 large eggs
- Salt and pepper
- In a medium sautée pan on medium heat, heat oil and sautée the zucchini and onions with a little salt and pepper to taste until softened, about 5 minutes.
- As they cook, beat eggs until they have an even consistency.
- Spread the zucchini and onions evenly in the pan and pour the egg over top.
- Cook until the top is slightly set but not runny, about 8 minutes.
- Take a plate larger than the pan and place it over top to flip the frittata and then gently place the uncooked side towards the bottom of the pan.
- Cook for another 2 minutes and serve.
